National Fritters Day

Fritters, a popular fried food that can be sweet or savory, are celebrated tomorrow December 2nd.

There is some debate on exactly what fritters consist of, but thing is certain, they are fried, in a pan or in a deep fryer. In fact, their is derived from the Latin word "frictura," which means "a fry." That word was derived from "frigere," which means " fry".

Apple Fritters and Peanut Butter Caramel Sauce

In general, a fritter has a batter or breading, and usually has fillings such as meat, seafood, vegetables, or fruit, although fillings are not absolutely necessary for it be considered a fritter.

In the United States, fritters are often made with a batter of eggs and milk, along with cornmeal or wheat flour. Corn fritters, made with whole canned corn, are a popular fritter in the States, as are a fruit variety, apple fritters.

Crab cakes and zucchini fritters are also common, and hushpuppies are often considered be fritters.

Even presidents have enjoyed fritters; Grover Cleveland served a parsnip variety at the White House on Thanksgiving. Many other countries have foods that can be considered as fritters.

For instance, both the French beignet as well as the Indian pakora may be seen as being a fritter.

I looked up that parsnip recipe... I never imagined them in a fritter!

1 parsnip, peeled and grated into sticks using a mandoline or grater
2 tbsp coconut flour
1 egg, beaten
1 tsp ground cumin
A pinch of sea salt and freshly ground black pepper
1 tbsp coconut oil, melted

An apple fritter is my favorite at the donut/coffee shop. My late mother used to make corn fritters, and they were very good.

It is windy here tonight with heavy drifting snow, 31F. More of the same 2morrow.

Now you can make your own apple fritters! Corn fritters with bacon and maple syrip are a great evening meal around here too.

I will try to do my buttery apple fritters for a DIY format to help those who might be a bit intimidated by deep fat frying. These delicious treats brighten up a holiday table.
