NACHOS !

One of our favorite meals for a "sports dinner" is being celebrated! National Nachos is being observed on November 6th.

Nachos trace their roots to the border of Mexico and Texas. One in 1943, the wives of U.S. soldiers stationed at Fort Duncan in Eagle Pass, Texas, crossed the border into Piedras Negras, Mexico. When they stopped in to eat at Club Victoria, chef Ignacio "Nacho" Anaya threw together a snack to give them and called it "Nachos Especiales". In 1954 his recipe was published in St. Anne's Cookbook, by the Church of the Redeemer in Eagle Pass.

There are many variations of nachos. "Ballpark nachos"—covered with jalapenos and melted cheese—were invented by Sal and Margarita Manriquez, and are now popular at sports stadiums. Sal Manriquez started them as "Margarita's State Fair Nachos" at the State Fair in Dallas in 1964, and in 1975 asked to them Arlington Stadium, where the Texas Rangers then played. Manriquez was turned down and later found that the stadium was a version of his nachos anyway.

Nachos with a lot of toppings are often called "loaded nachos" or "super nachos". They are usually served as an appetizer bars or restaurants, but are often seen as a meal in and of themselves.

Chips are placed on a platter, and meat, refried beans, and shredded cheese are put on top. The cheese is melted, and then cold toppings such as lettuce, tomatoes, and salsa are added on top.

Barbecue nachos are popular in Memphis, Tennessee, which include barbecued pork shoulder and barbecue sauce.

Kalua pork and pineapple nachos are popular in Hawaii. There are countless other variations of nachos that can be made.

Most important celebrate the by eating nachos!

I cut a log from the mess... drag it up the side of the ravine then cut it into manageable chunks for the fireplace.

Nachos are fun to prepare and even more fun to eat. I try to dodge the wicked hot jalapenos, but love the milder ones.

JR our GMO corn goes straight from the field to the ethanol refinery or is stored separate for biodiesel with no chance of entering the food chain. It doesn't even get fed to our cattle. While some of the GMO coin does become animal feed after the Ethanol plant is done with it. To the best of my knowledge it goes for chicken feed.

There is a non-chain popular hangout here that makes some of the best. Also, whatever chips that they use are a combo of that perfect crunch but "airy" on the inside. That is the only way I can describe them. They don't get mushy as you plow through the stack!

Darrin, you can have my guacomole; it is a dip or topping that I just can't get to like, no matter how hard I try.

Our family owned Mexican restaurant gets their chips from a St Louis based tortilla chip company in like25 lb bags and they also fit your description.
